Thanks to AVIS Ireland for adding us to their list of 12 fine dining restaurants in Ulster.
So in the last few months we have started to make our own butter from scratch, We are gonna share the same recipe we use in the restaurant. Its really simple to make and you wont need a lot of equipment or even a butter churn.
we have been testing different recipes but this is the easiest and quickest. Making butter at home lets you add as much or as little salt as you would like. Eating real butter in your everyday diet has its benefits also:
Butter is rich in the most easily absorbable form of vitamin A.
Butter contains lecithin, essential for cholesterol metabolism.
Saturated fats in butter have strong anti-tumor and anti-cancer properties
Vitamin D found in butter is essential to absorption of calcium
What you will need:
pint of cream
whisk and bowl attachment.
greece proof paper
sieve or muslin cloth
How its done:
simply pour the cream into the bowl add the whisk attachment and whip the cream.
whip until the cream turns like a lumpy texture
At this point you will see buttermilk and a clump of butter
Drain the buttermilk through the sieve or through a muslin cloth.
Rince the butter with ice cold water until it runs clear
Make sure to drain out all the water or as much as possible.
Place the butter in a bowl and add a small pinch of sea salt or any other ingredient ( we use chili, basil, garlic, chive, mixed herbs, saffron )
Once your ready to roll the butter place your sheet of greece proof paper on a work bench, with your spatula get all the butter from the bowl. On the bottom on the sheet place the butter in a thin line, roll the butter taking out any excess air. Once this is complete tie both sides of the greece proof paper and set in the fridge for a few hours to harden up. Or the butter can also be enjoyed at room tempature, (You will never pick up the spreadable margarine crap again) we refridgerate ours to make it easier to cut in to shape.
When we have a pasta dish on our menu we always make homemade fresh pasta. we use a simple basic pasta recipe to make all sorts of pasta from ravioli, tortellini, pappardelle etc. we will share the recipe with you today. it is so easy to make and only takes 20 minutes. you can pick up a small household pasta rolling machine almost anywhere. TK.Maxx Amazon, Argos etc.....
You will need
about 600g of 00 pasta flour
3 whole egg
4 egg yolks
1/2 tea spoon of salt
saffron strands with a little water (optional)
Place the flour and all other ingredients in a food processor. give it a few pulses for 5 second blast until the mix comes to a sandlike texture. Tip the mix out on to your work bench. knead the mix for a good 10-12 mins. Kneading is an important part of the pasta-making process as it develops the gluten in the flour, giving the pasta a firm tender texture. Wrap the pasta dough in cling film and keep in the fridge for an hour to rest.
Now the fun part.......
push the dough out with your hands or a rolling pin. run it through your pasta machine on the thickest setting for a few times. once the pasta starts to go through easy then start rolling it through all the settings one at a time. when you reach the final setting roll out and cut into sheets of even size. now you can start shapping your pasta.
To Make Ravioli.....
Have a sheet of pasta on your work bench, brush all over with egg yolk. add a spoon of filling (we use goats cheese and spinach at the moment but change all the time) put another sheet of pasta over the top and seal with no air pockets. then cut with a pastry cutter. cook for 1-3 mins in boiling salted water and enjoy
